Vassaltis vineyards is Santorini’s newest winery, established in 2014. On an island formed by volcanic eruptions through the centuries and covered with basalt rocks, grapegrowing and winemaking are still today active as ever. Under extreme heat and wind, the island’s indigenous grape varieties produce wines of superior quality Vassaltis, a boutique winery with a limited production of 50,000 bottles, focuses on the island’s main grape variety, the Assyrtiko, producing high quality wines.
